have the steamer covered through the cooking process. Less rising time might not have given your cake an ideal honey comb texture, but shall not have turned the cake brownish. I would guess it's more to do with the rice flour you use, but I am not sure as it hasn't happened to me. Could it be the proofing teprameture slightly too high?
